Sesame noodles for lunch

Any type of noodles (hot or cold), dressed with soy sauce, toasted sesame oil, sesame seeds and scallions; makes for a quick light lunch, maybe with a poached or fried egg and some miso soup with spinach would be nice.
I have to get back to work now. =(

That looks great! I got a HUGE bag of noodles from the oriental food store in town, and it’s just sitting in my cabinet staring at me because I don’t know what to do with all of it. This looks like a great, easy, light lunch that I can try. Thanks!

my goodness you’ve been a cooking monster lately. i wish i could keep up. work prevents me from doing so. i can’t wait till busy season is over with. -chelle

A sesame paste sauce works pretty well also. Top with some sliced cucumbers and toss. Simple lunch to get rid of cold leftover noodles.
